Ever want to know what to do with the weeds in yor lawn? Heres a suggestion..

Dandelion Greens

Wash and cut 1 pound of dandelion greens into bite sized pieces. Steam in a small amount of water in a covered saucepan. Steam 10 to 20 minutes depending on age of the greens. Drain and season to taste.

Adding other ingredients can be fun and add varitey to the greens. Try saute'ing 3 Tbsp onion and 1 small clove of garlic, finely choppd, in 2 Tbsp bacon fat. Add to hot cooked greens just before serving.

Dandelions can be used in salads too. Use to small, tender leaves. Wash well, dry and add to tossed green salads.

Dandelion salad is also good. Take the small green leaves and prepare as above. Combine with cubed tomatoes, chopped green onion and thinly sliced celery. Toss with French dressing.
